Goat's Milk Cheeses
Beemster Premium Goat, Pasteurized - Although semi-soft and pliant in elasticity, the consistancy of this goat's milk Gouda makes it one of our creamier, pressed cheeses. This is one of our most popular cheeses for entertaining. The stark white pate yields a smooth flavor. - For View Only
Humboldt Fog Chevre, Pasteurized - As the signature product of Cypress Grove, this gently pasteurized goat's milk is as delightful in plating as it is on the palate. Dense and chalky, the pate is smooth and features a ribbon of edible vegetable ash. - For View Only
Leonora, Pasteurized - Slightly flaky yet still creamy, Leonora is handmade in the mountains of Leon from Apline goats milk. This pasteurized cheese is only 3 months old and has less of the bitter, salty flavor found in Montenebro - For View Only
Midnight Moon Chevre, Pasteurized - This pateurized goat gouda is produced in Holland for Cypress Grove due to their high quality of cream, and then aged for a minimum of 1 year before release. Dense and granular, with an essence of brown sugar. - For View Only
Monte Enebro, Pasteurized - Produced at the heart of Tietar Valley in the provence of Avila, this gently pasteurized goat's milk is lightly acidic and slightly salty. Covered in ash and P. Roqueforti, the rusty rind is tart and blooms in the mouth. - For View Only
Pantaleo, Pasteurized - Aged 3 months, this pasteurized goat's milk cheese is named for the city of Pantaleo on the Northeastern coast of Sardigna. Firm, yet not completly dried out, the peppery flavor of this cheese is clean and full. - For View Only
Pyrenees Chevre Fermier, Raw - At three months of age this raw goat's milk from Aspen Valley in the Pyrenees is smooth with a subdued nutty flavor that is unlike other French goat cheeses. Dense and somewhat pilant, this is best enjoyed in thin slices. - For View Only
